My family love a Sunday roast , preferably beef with yorkshire puddings ,roast potatoes and gravy.

My preference is for a sirloin roast which may be expensive but well worth it and fantastic cold in a sandwich for lunch the next day.

Its easy to cook a roast but sometimes the yorkshire puddings can be a bit tricky !

This is my recipe and tips for simply fantastic Yorkshire Puddings

Use a large roomy bowl and a good whisk, mix the eggs ,flour and milk into a light batter.Season and pour into a jug and leave till you are ready.

You really need to hand whisk these as if you use a food processor or electric mixer they will not rise and be light

Turn the oven as high as it will go and this should be after you have taken out your roast and left it to rest in a warm place.

Using muffin tins add a tiny bit of oil to each tin and put into the oven to heat .When the oil is smoking open the door and slide the tray out half way and quickly fill each muffin section with some batter . Close the door and DO NOT OPEN IT for 20 minutes or your Puds will SINK !!

After 20 mins the puds will be cooked and you can serve them with your roast beef and roast potatoes .My children love them with a puddle of gravy in the middle !
